Also known as Paraguay tea mate is an herb prepared from the leaves of a South America evergreen shrub, Illex paraguayensis – like guarana and yopo, it is rich in caffeine and was used by the native population of Latin America as a caffeine source long before European settlers arrived.
Called “The drink of the gods” by the indigenous people of South America Jesuit missionaries founded the first Yerba Matte plantations during the mid-1600s.   The caffeine content of mate is comparable to that of mild Arabica coffee.
 The tips of the branches are cut just before the leaves reach full growth and the leaves are steamed and dried, the dried leaves are then allowed to age in order to enhance the flavor of the mate.

Hot tea brewing method:  Place 1 rounded teaspoon of tea per cup in an infuser, teiere or teapot, pour on boiling water. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea).  Adding milk is not recommended – sweeten to taste, we suggest honey.
